Adding to what others have already sugge...
Adding to what others have already suggested, what I think many men like above many other things is that you have a positive and appreciative attitude.
When ever you are happy and concentrate only on the positive things on a first date it makes a man feel successful and more attracted to you. For example, if he takes you to salsa dancing or to the movies, the more you concentrate and share what you like about the experience the better.
Above anything else a guy wants to make you happy and show you a great time. This is the way men bond with you.
But what if the movie was horrible or he was stepping on your toes on the dance floor, you may ask? In this case, it is best to overlook the negative and share it later with your girlfriends.
If he asks if you are having or had a good time, simply find something good to share about the experience. You don't have to nor should you ever lie, but simply find something positive say like: "I just love watching these great dancers" or "I thought that one scene at the garden was very funny".
By concentrating only on the positive it strengthens the bond between you too and it will give him more courage to continue pursuing you as your relationship develops.

I think common interests and sense of humor would be fairly common themes.
If a woman can make me laugh and is laughing at my jokes I will want to spend more time with her. Attraction is a lot about having fun and laughter leads easily to flirting if that is the intent.
The second fork is less universal but I think that it is common enough to be worth mentioning. If you seem to know a lot about something I am interested in I will probably want to hear more about it. This obviously isn't a siren song that seduces all those who hear it but give it a shot and see what happens.

Aside from physical appearance (because I don't think that's what you're getting at with this question), the thing I really like about a girl when I first meet her is if she seems grounded. What I mean by this is her sense of comfort in her own skin, but also that she's level-headed about her surroundings and just how easy-going shes seems. That's the one thing I love to see when I meet a girl for the first time.

I doubt you will get a clear and concise answer to this question. Guys like lots of things about lots of different girls. Not only that, but every guy is different. So if you are really asking, "What does a guy want most in his first interaction with a girl?" then I would probably say Compliance. But too much compliance takes the fun away, removing that thrill-of-the-chase component.
Oftentimes, when it comes to first meeting a person, men and women enjoy similar things. Laughing reduces tension, so jokes are great. Role-playing and other games are fun too.
If you're asking what a guy is attracted to in a girl, then the answer is still that men are attracted to women based on physical appearances, first and foremost. A man's initiative to have sex is based on his preferences for a girl's body type, facial features and how she's dressed, initially.
